To foster industry exchange and the development of Macau’s dynamic culinary scene, once again, MGM joined hands with world-renowned celebrity chef for industry exchange. On March 7, Angelo Musa, a world champion pastry master and author, was invited to showcase his pastry-making expertise at the “CHOCOL’ART Culinary Demonstration” to over 80 pâtissiers and small enterprise owners from Macau, as well as chefs and entrepreneurs from Hong Kong and Mainland China. The demonstration and sharing session was held at The Vista of MGM COTAI.
MOF Musa has been granted with several world-leading accolades during his 30 years of industry experience, including the highly respected World Pastry Cup in 2003 and French Craftsperson of the Year (Meilleur Ouvrier de France) in 2007. His contribution to the industry is being recognized by the Minister of Culture under the Government of France, in which he was being crowned as the Knight of the Order of Arts and Letters in 2019.
During the event, Chef Musa shared his insights towards pastry-making, followed by demonstration of four types of French chocolate pastries, by using eight different types of chocolate from Chocolaterie de l’Opera, a French artisanal chocolatier established nearly a century ago. At the same time, Chef Musa also shared anecdotes on this journey from being a pastry chef, growing into the maestro that he is today, with insights on being chef with successful businesses. The event was rounded up by a networking session to foster industry exchange.

While for this chocolate pop-up series with patisserie master Angelo Musa, we employ culinary arts, specifically using chocolate as a universal language, to achieve the notion. This collaboration is part of MGM's initiatives to encourage culinary exchange, and to strengthen Macau’s positioning as the Creative City of Gastronomy. Also, we have assigned our local pastry talents to take part and lent their support to Musa in the kitchen as a valuable learning opportunity.”
Winnie Lao, the owner of KEICA Bakery from Macau, attended the event and expressed, “The last time that I had the opportunity to learn from such a well-respected pastry master was back in Le Cordon Bleu Tokyo. To be able to do this again, especially in my hometown Macau is sheer privilege and extra excitement. The experience sharing from Chef Musa on how he turned his passion in pastry-making into a worldwide recognition and successful business fuels my pursuit of excellence as a chef and owner of my bakery.”
On top of the industry workshop, throughout Chef Musa’s stay, he will be joining hands with MGM’s culinary team to hold several dining offerings at MGM COTAI for the public, including “CHOCOL’ART · The Perfect Pairing” Session and an innovative 6-hands east-meet-west degustation dinner with chocolate as the joint ingredients. Nevertheless, Chef Musa will bring his champion cake from the World Pastry Cup to Macau for the first time, together with an afternoon tea set for chocolate lover.
