MGM Celebrates Chinese Heritage through Culinary Arts and Culture with the Prestigious Chefs des Chefs Delegation
A highlight of the Club des Chefs des Chefs annual meeting was the Dim Sum Masterclass, led by Chef Homan Tsui, Executive Chef of MGM MACAU (Chinese Cuisine) and team.

[December 4, 2025, Macau] MGM proudly partnered with Mandarin Oriental, Macau and Chaîne des Rôtisseurs, Bailliage of Macau SAR to host the prestigious Club des Chefs des Chefs (CCC) annual meeting. Recognized as the “G20 of Gastronomy”, the CCC annual meeting was brought to Asia in mid-November, uniting 14 of the world’s most distinguished head chefs to celebrate culinary excellence and foster cultural exchange in Macau, Shenzhen and Bangkok. While helping to reinforce Macau’s reputation as a UNESCO Creative City of Gastronomy through the partnership, MGM also showcased Chinese cultural heritage to the Delegation through comprehensive experiences curated in the universal languages of culinary arts and culture.

 

Culinary arts, being an integral component of culture and heritage, is a valuable bridge among different cultures. A highlight during the CCC’s stay in Macau was a Dim Sum Masterclass led by Chef Homan Tsui, Executive Chef of MGM MACAU (Chinese Cuisine) and his award-winning team. The CCC chefs and members tried their hands on creating one of Lingnan cuisine’s well-kept traditional sweet: Chinese Puff Pastry with 20-year-old Tangerine Peel and Red Bean. The group was first introduced to the eight staple branches of Chinese cuisine, in which Cantonese cuisine falls under, with an emphasized description of the region and specialties of Lingnan. With preset doughs and fillings, the chefs had a joyful trial on handy craftsmanship as they were guided to create this acclaimed pastry in the style of a woven handbag. This hands-on experience highlights the innovative mindset of Chef Homan Tsui, the craftsmanship of Lingnan cuisine and the depth of Macau’s gastronomic heritage.

 

In the effort to further augment cultural exchange from overseas guests with local and Chinese cultural heritage, the delegation, along with CCC President Gilles Bragard were invited to the recently opened Silk Road Beyond Borders exhibition at the POLY MGM MUSEUM. The exhibition, featuring over 200 historical artifacts and contemporary artworks, traces the history of the overland Silk Road through imaginative curatorial storytelling and use of innovative technology. With the assistance of a docent-guided tour on-site, the participants were introduced to the core of the exhibition which resonates with the vision of the Club: peaceful cooperation, openness and inclusiveness, mutual learning, and shared benefit—underscoring the enduring relevance of cultural exchange.

 

Following the session, guests savored an authentic Cantonese lunch at Grand Imperial Court, before enjoying a pre-cocktail gathering at Aux Beaux Arts. The evening culminated in a charity dinner at Mandarin Oriental Hotel, Macau, continuing the Chefs des Chefs tradition of supporting meaningful causes.

 

Le Club des Chefs des Chefs 2025 annual meeting brought representing chefs from different countries in four continents, including China, Canada, Denmark, Finland, France, India, Ireland, Italy, Kazakhstan, Morocco, Singapore, Spain, Switzerland, and the United States of America.
