MGM’s Imperial Court and Bar Patuá Partner with The Macallan on Limited-Time Whisky Pairing Dishes and Cocktails
A Sensory Journey Blending Eastern Tea Aroma with the Craftsmanship of Scotch Whisky
Chef Homan Tsui, the culinary mastermind behind Imperial Court, presents a series of limited-time dishes that artfully blend Eastern tea aroma with the craftsmanship of Scotch whisky.

[March 16, 2026, Macau] This spring, MGM once again joins hands with single malt Scotch whisky brand The Macallan to present a limited-time whisky pairing experience at MGM MACAU’s Chinese restaurant Imperial Court from March 16 to April 19, 2026. Complementing the dining experience, Bar Patuá at MGM COTAI will unveil two exclusive collaboration cocktails with the whisky distillery, weaving together flavors and aromas that capture the essence of the season.

 

Homan Tsui, Executive Chef of Chinese Cuisine of MGM MACAU and the chef who leads Imperial Court, will showcase his refined craftsmanship while incorporating The Macallan’s newest release, The Harmony Collection Inspired by Phoenix Honey Orchid Tea, into four meticulously crafted dishes. The special menu invites guests to indulge in a multi-sensory dining journey where the delicate flavors of Lingnan cuisine meet the artistry of Western whisky-making.

 

Celebrated for its refined Lingnan-style handcrafted cuisine, Imperial Court is known for creations that embody both tradition and innovation through masterful technique. Founded in 1824, The Macallan has earned global acclaim for its exceptional whisky craftsmanship, balancing its heritage with a spirit of innovation. Both brands share an unwavering commitment to quality and artisanal excellence. Originating from nature, whisky and tea gradually reveal their character through nature, tradition, and time. Tea evokes the serenity of dawn, while whisky reflects the depth of night. Inspired by Phoenix Honey Orchid Tea, this expression from The Macallan Harmony Collection, created in collaboration with the prestigious British tea house JING Tea, unfolds a fragrant narrative that bridges cultures and continents.

At Imperial Court, four special dishes showcase the distinctive character of The Macallan Harmony Collection Inspired by Phoenix Honey Orchid Tea. The Marinated Sliced Sea Whelk with The Macallan and Spicy Sauce boldly replaces traditional rice wine with whisky, allowing the spirit’s aromatic warmth and spice to intertwine with the sea whelk’s crisp texture and natural sweetness. The Steamed Grouper Fillets with Egg Custard, Rolled with Walnut and Ham with The Macallan features delicate leopard coral grouper paired with toasted walnuts, where the fish’s freshness and nutty richness are complemented by subtle whisky notes.

Another highlight, Phoenix Dancong Tea Smoked Wagyu Beef Cheek with Chinese Pickled Cabbage and The Macallan, showcases premium A5 Wagyu beef cheek pan-seared to perfection. Tableside, the dish is finished with a pour of The Harmony Collection Inspired by Phoenix Honey Orchid Tea over the sizzling covered clay pot, allowing the whisky’s aroma to mingle with oolong tea leaves and green peppercorns beneath. As the heat releases the fragrance, layers of tea smoke and whisky unfold in the air, creating a captivating sensory moment. To conclude the experience, Roselle Jelly with The Macallan combines the refreshing tartness of roselle with a crystal-clear jelly, accompanied by a special whisky-infused brown sugar syrup that balances floral brightness with mellow sweetness for an elegant finale.

For those wishing to experience The Harmony Collection Inspired by Phoenix Honey Orchid Tea in a different way, Bar Patuá at MGM COTAI offers two exclusive cocktails. Inspired by this collaboration, the bar team has crafted two limited-edition cocktails. Honey Orchid Breeze highlights the honeyed sweetness and orchid-like aroma of Phoenix Honey Orchid tea, offering a refreshing and delicately layered profile reminiscent of morning dew. Whispers of Spring, meanwhile, showcases the elegant fruitiness of whisky, led by notes of apricot that evoke the lively spirit of spring.

 

During the promotion period, guests dining at Imperial Court may enjoy each featured dish paired with The Macallan Harmony Collection Inspired by Phoenix Honey Orchid Tea, accompanied by Phoenix Dancong tea brewed by the restaurant’s tea master, for an additional MOP 250* per dish. The two collaboration cocktails at Bar Patuá are priced at MOP150** per glass. Guests are invited to savor this cross-cultural culinary experience where Eastern flavors meet Western craftsmanship.
