MGM Organizes Exchange Session to Reinforce Macau as a Creative City of Gastronomy

[April 25, 2018, Macau] As part of MGM’s commitment to driving economic diversification and bringing more advanced and innovative forms of entertainment to Macau, MGM’s newest integrated resort in Macau – MGM COTAI is establishing itself as Macau’s most innovative culinary destination. The new property has brought in four globally acclaimed chefs to helm the culinary adventures and has developed a truly innovative and unique culinary portfolio for Macau. With Macau celebrating the “2018 Macao Year of Gastronomy,” MGM organized an exchange session between the Task Group for the Promotion of Gastronomy and Cultural Industries of The Committee of Cultural Industries of Macao SAR Government and MGM COTAI’s celebrity chef, Graham Elliot. This special session aimed to exchange ideas on how to enhance the city’s gastronomic development with art and cultural elements in order to reinforce its designation as a UNESCO Creative City of Gastronomy.

As the celebrity chef of Coast at MGM COTAI, Chef Graham Elliot is the judge of the American reality television series, Top Chef, and is one of the most recognized faces cooking in America today. At the exchange session, Mr. Moky Lam, Vice President of Food and Beverage of MGM and Chef Graham Elliot invited the members of the Task Group to the restaurant kitchen of Coast and introduced the restaurant’s philosophy and inspirations from local flavors such as African Chicken 2.0 and the use of Portuguese chorizos for pizzas. The whole group was then joined by Mr. Grant Bowie, Chief Executive Officer and Executive Director of MGM China Holdings Limited, to further discuss on the next step in promoting a more creative and vibrant gastronomic scene in Macau.

Chef Graham Elliot said at the discussion, “Macau is a place with rich cultural heritage and unique flavors and so far, it is the only place out of America that I am interested in running a restaurant. When MGM first approached me on this cooperation, I was very interested in working with them for the sake of bringing some of the world’s most renowned and contemporary cuisines to create memorable dining experiences to locals and visitors of Macau.”

Prof. Hsu Hsiu Chu, Vice President of The Committee of Cultural Industries, and Group Convener of Task Group for the Promotion of Gastronomy and Cultural Industries of The Committee of Cultural Industries of Macao SAR Government, said, “I’m a fan of Chef Elliot’s cooking show, so it’s been an honor to meet him in person at Coast. In everything from his restaurant decor, ingredient selection to plating, Chef Elliot showcased the seasonal and cultural inspiration for his craft, and it showed me that food is a complicated manifestation of sensibility that can be transformed into art and blended with culture. We hope MGM can continue to take the lead to leverage on celebrity chefs and gourmet foods, in pursuit of ‘adding value through creativity’ and ‘adding creativity to gastronomy’ to promote Macau as a Creative City of Gastronomy. Embracing these strategies can stimulate the direct and indirect benefits of the food industry, create more opportunities for cultural development within Macau, increase tourism revenue, and nurture culinary and creative talent.”
